There is nothing quite like enjoying fruits & vegetables when they are in season. Recently in my Kids in the Kitchen class we used peaches to create gluten free crumble pies! Inspired by how amazing the kids did, I came home and used my own creativity to make a crumble pie!
1 cup Oat Flour (or gluten free flour of choice)
1 cup large rolled oats
1 tbsn chia seeds
1/8 tsp cinnamon
1/4 cup butter, melted
4-5 fresh local peaches, cut into thin slices
Preheat the oven to 375. Leaving peaches aside, place all ingredients into a bowl and mix
well until crumble forms. Reserve 1/4 cup. Using a small oven safe dish (any shape will do), press crumble into the base. Arrange peaches along edges and assemble a mound in the centre. Place reserved crumble in the centre.
Bake for 30min.
